Paleo Tomato Basil Soup
Like most people, I crave the thickness of cream in my soups. This paleo version of classic tomato basil bisque provides the perfect combination of tart, sweetness and cream that will delight your senses.

Ingredients
- 6 ripe tomatoes
- 1 onion, chopped
- 1/2 cup packed fresh basil
- 3 garlic cloves, minced
- 6 oz can tomato paste
- 3 cups chicken stock
- 1 tbsp olive oil
- 1 tbsp coconut oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat the oven to 350 degrees.
- Quarter the tomatoes and discard the seeds.
- Toss the tomatoes with olive oil, salt and pepper.
- Lay the tomatoes on a foil-lined baking sheet and roast for 30 minutes.
- In a large pot, sauté onion and garlic in coconut oil until onions are cooked.
- Add in the roasted tomatoes and sauté for an additional minute.
- Stir in chicken stock, basil, tomato paste, paprika, garlic powder, salt and pepper continuously over medium heat and bring to a boil.
- Reduce heat to low, cover pot and simmer for 30 minutes.
- Pour soup into a blender and puree until smooth.
- Garnish with chopped basil and serve!

Paleo Bacon, Avocado, Tomato and Arugula Flatbread

Ingredients
- 1 head cauliflower
- 4 large eggs
- 1 tsp salt
- 2 tsp oregano
- 2 cloves of garlic, minced
- 6 slices of bacon
- 6 tbsp tomato paste
- 1/2 large red onion, chopped
- 1/2 cup tomato, chopped
- 2 cups arugula
- 1 sliced avocado
- 2 cups grated cheddar cheese (not so paleo option)
Instructions
- Preheat the oven to 375 degrees.
- Cut the head of cauliflower into sections and pulse in food processor until a rice-like consistency is reached.
- Pour into a bowl and whisk in eggs, salt, oregano and garlic.
- Spread the mixture onto an 11 x 17 lined baking sheet.
- Bake at 375 degrees for 12-15 minutes until the edges are golden.
- Saute the bacon and onion in a pan then chop the bacon into pieces.
- Take the flatbread out of the oven and let it cool.
- Spread the tomato paste on the flatbread and sprinkle the optional cheddar cheese.
- Scatter the red onion slices, tomato, bacon and avocado on the flatbread.
- Broil the flatbread for 5 minutes.
- Remove the flatbread from the oven and sprinkle the arugula leaves over the top.
