Paleo Chipotle Tortilla(less) Soup
Your taste buds will do the cha-cha with this paleo tortilla-less soup! This soup is chock full of chicken and is delicious as-is but you can sprinkle a handful of my paleo tortilla chips on top for an additional crunch. Sprinkle some cayenne pepper and paprika for an even zestier crunch. Olé!

A zesty and hearty Mexican-style chicken tortilla soup.

Ingredients
- 1 pound boneless and skinless chicken breasts, cooked and shredded
- 3 garlic cloves, minced
- 1/4 cup red onion, chopped
- 1 14.5 oz. can diced tomatoes, undrained
- 1 14 oz. can chicken broth
- 1 cup water
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- ½ tsp cayenne pepper
- ½ tsp salt
- ½ tsp black pepper
- ¼ cup fresh cilantro, chopped
- 1 lime
- avocado to garnish
Instructions
- Heat olive oil, garlic, red onion and chicken in a large pot over medium-high heat and sauté for approximately 1 minute.
- Add chili powder, paprika, cumin, garlic powder, cayenne powder, salt and black pepper and stir well.
- Add diced tomatoes in juice, chicken broth and water, stir and bring to a boil.
- Lower heat to low and simmer for 10 minutes.
- Serve with chopped fresh cilantro, lime and avocado!

A paleo version of classic huevos rancheros.

Ingredients
- 2 cups egg whites
- 1 cup ground turkey or cubed chicken
- 1 tomato, chopped
- 2 garlic cloves, minced
- ½ tsp chili powder
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp paprika
- ¼ tsp garlic powder
- ¼ tsp turmeric
- ¼ tsp oregano
- one 7 oz. can of ranchera sauce
- one 7 oz. can salsa verde
- cilantro to garnish
- shredded Mexican cheese (optional)
Instructions
- Sauté garlic in olive oil with ground turkey or cubed chicken with chili powder until cooked and set aside.
- Mix egg whites in a bowl with salt, black pepper, paprika, garlic powder, turmeric and oregano.
- Scramble egg whites in olive oil with garlic on low-medium heat until firm.
- Layer slightly cooled egg whites, optional shredded cheese, tomatoes and cilantro on a plate.
- Top with ranchera sauce, salsa verde and cilantro!
